Six Big Wins for Calgary's Cococo Chocolatiers at this year's International Chocolate Awards Canadian National Competition
Awards were presented to Cococo Chocolatiers across a variety of categories.
Cococo Chocolatiers, the Chocolaterie Bernard Callebaut company, is happy to announce that at the 2014 Canadian National installment of the International Chocolate Awards, held in Vancouver last week, six awards were presented to Cococo Chocolatiers across a variety of delicious categories:
Bars – Dark chocolate bars flavoured with inclusions or pieces
BRONZE: Cococo Chocolatiers – Habanero Sea Salt Dark Chocolate Bar
Bars – Flavoured white chocolate
BRONZE: Cococo Chocolatiers – Good Clean Fun Bar, Saskatoon Blueberry White
Dark fruit pastes, jellies/gelée, enrobed whole fruits, liquid centers with alcohol and fondants
GOLD: Cococo Chocolatiers – Apricot Jelly and Lavender
Milk – Ganaches and truffles
GOLD: Cococo Chocolatiers – Nutmeg Orange
SILVER: Cococo Chocolatiers – Honey Anise
Milk – Caramels
GOLD: Cococo Chocolatiers – Sea Salt Caramel in Milk Chocolate
"Many of the chocolates that won awards this year have unique and uncommon flavour combinations, especially in the Canadian market. We now have four Master Chocolatiers, and they amaze us every day with their bold food‑forward ideas” says Kristen Halpen, Marketing Manager at Cococo Chocolatiers – owners of Chocolaterie Bernard Callebaut®. “And we are also very proud of recipes that still seem new but that are fast becoming traditions themselves. We are especially excited by the Gold award for our Sea Salt Caramel in Milk Chocolate. Suddenly, everybody in the chocolate business has a salted caramel, but we know ours is special, and it’s nice to see that recognized. We cook our caramels in-house using a secret process and they are simply amazing, especially once combined with our world famous milk and dark chocolate recipes. Our caramel collection became one of our top sellers very quickly”.
Derrick Tu Tan Pho, one of four Maître Chocolatiers at Cococo Chocolatiers, is no stranger to chocolate competitions. His Rosemary Fusion Chocolate Tablette won Gold for Cococo at the International Chocolate Awards in London in 2012, the same international competition where these recent six winners will compete this coming November. Four of the six winning chocolates can be found in a boxed collection Derrick Tu Tan Pho created. Retailed at Cococo’s 33 locations, the collection is called ‘The 12’.

The International Chocolate Awards is an independent competition recognizing excellence in fine chocolate making and in the products made with fine chocolate. The judges were drawn from experts, food journalists, sommeliers and pastry chefs from Canada and members of our permanent international Grand Jury.
